With Anzac Day approaching its a great time to make some healthy Anzac Protein Cookies. Here is a recipie I have just used. These cookies are idea as a treat with a refeed meal, a quick and easy grab and go breakfast option or pre/post training.

- 3 Cups of Oats

- 1 Cup of Coconut

- 3 Tbspn Cinnamon or Mixed Spice

- 2 scoops Bulk Nutrients Salted Caramel Protein Powder

- 2 tsp Stevia

Mix all with 1 cup of boiling water to make thick consistency. Roll into balls and place on baking paper or baking tray then flatten balls.

Bake at 200 degrees for 10-15 minutes on fan bake (or if not fan bake turn over once).

Keep an eye on them as they can brown very fast.

Approx 100 calories per cookie if making 12 cookies.
